Vanilla Cupcakes
Ingredients:
1 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup oil
2 eggs
1 tsp vanilla essence
Method:
1. Sift dry ingredients together.
2. Add wet ingredients to dry ingredients and beat well until smooth and creamy.
3. Place paper liners into muffin tray and fill each cup 3/4 full.
4. Bake for 15 mins or till golden brown at 180 degrees C
Icing:
1. Cream together 125g margarine and 125g icing sugar.
2. Add 2 tbsp of milk and mix well.
3. Add cocoa or food colouring.
