Vegetable Spring Rolls

Vegetable Spring Rolls







Ingredients:
15-17 spring roll wrappers
1/2 cup bean spouts
1/3 head cabbage chopped
1 cup thin noodles
1 stalk green onions (optional)
1/4 bell pepper (optional)
1 1/2 carrot
1 tbsp lime juice
1 tbsp soy sauce
1 tbsp oil (to steam vegetables)
f.g herbs and flavouring (if desired)

Method:
1. steam vegetables with oil for 5-10 mins.
2. Let vegetables cool
3. Toss vegetables and all other ingredients in a bowl except for spring roll wrappers.
4.Sprinkle wrappers with hot water and add 2 tbsp of mixture into each wrapper.
5.Fold wrappers and deep fry till golden brown
6. Serve with dipping sauce of choice (I used plum sauce) and Enjoy!
